I've noticed the stream_start statistic on my stream is updated a few times daily. I understand the docs say "Timestamp of when the currently active source client connected to this mount point". I have not been manually starting and stopping the mount. Can this happen if there is a connection issue between the source client and the server? Or perhaps excessive bandwidth use on the server?

If a disconnection occurs for whatever reason, network stability, source termination, some other timeout and the source then reconnects then the timestamp will be updated. If this is a source client feed then you shoud have some SOURCE (for PUT) lines in the access log.
