Every time we talk to a possible advertiser on our streams, the question comes up: How many monthly listener hours does your station have?
Is there a way to track this with Icecast? Any 3rd party software?

Use analog.
You can compute total hours from the bit rate and the data transferred.
The "processing time" report is abused to show connect time.
The buckets in that are not greatly useful, sadly, and the code it difficult to comprehend as it is badly commented. But you could in principle change the bucket boundaries.
here is my conf file for an icecast server, the FILEINCLUDE statements can be used as here to restrict the streams you want to look at on a server with multiple streams;
