I've read through the GNU General Public License, but I'm unclear on whether it would be legal to use IceCast (or any similar open source software) to stream audio for a subscription site...I'm not sure if I understand some of the issues here, but it seems that I'm not distributing any software specifically. The users would whatever open source media player they wanted, but I would be using it for my web site.
Any clarification on this would be greatly appreciated.

It sounds like you're using icecast to distribute media content to listeners, the GNU GPL does not cover that aspect, your listeners can use proprietry players as well (eg winamp, real, windows media player). If you were to modify the Icecast server itself and distribute it then the GPL license would apply.
