Greetings:

I have multiple private mounts set up. All has been working pretty well, but I just set up a new private mount. Now, if I am broadcasting on one private mount, and a stream starts up on the new mount point, the new stream seems to be knocking out the first stream and replacing it.

Has anyone seen behaviour like this?

no, the way you describe the effect won't happen because each stream is isoloated well. If the 1 stream is shutting down then check the error log for an indication of the reason.
