I would like to do the following.

Stream 8 seperate audio programs (that would be recieved through the inputs of a soundcard).

I would like to do that with one server.

Basically it would give the listener a choice of 8 stations offered by a single server.

Is this possible?

yes, a single icecast can handle 8 streams at the same time, the load test reports we put on our web site shows well over 1000 streams in fact. You will probably need 8 source clients to produce those streams.

How many streams does the icecast support per port? using ezstream as i client and the console version of icecast it seems like it only can put two mp3 streams on one port number.

There's no limit related to the number of ports. The only limits are a) your available bandwidth, and b) the maximum number of sources set in your config file. Increase that limit if you want more sources.

Would I need a sound card with 8 stereo inputs, or could I seperate the stereo channels, and broadcast each channel as a seperate mono stream?

Also how powerful of a machine would I need to do this? Also the 5 stereo channel soundcard that I am looking at(audiotrak Maya 1010) is a windows only card, so I would have to use windows.

you could have 8 seperate machines for all icecast cares, the creation of the streams is up to the source client(s) and what they support.

So I could use one channel of a stereo input for one stream, and the other channel for another stream?

As I said before, the source client is responsible for that. If the source client can pick and choose (eg with alsa) then yes. Either way icecast doesn't care.
